Garlic and Coriander Potatoes

I love this potato side dish recipe as a great way to pep up the flavour of regular potatoes. Baby new potatoes par-boiled first, then fried up with red onion and garlic and finished off with a drizzle of lemon juice and plenty of fresh coriander (cilantro). Serve with grilled meats, fish, curries and casseroles. They make a great addition to any BBQ too!

I love to grow potatoes every year, but I always plant too many and end up overloaded with potatoes. Fortunately we love them, and we’ve got plenty of potato recipes on the blog.

This is one I’ve been serving up over summer when we have a barbecue, and also as a side dish for curry night!

📋 Ingredients?

  • Baby new potatoes – or you can use chop up larger new potatoes into bitesize chunks (no need to peel).
  • Oil for frying – I use avocado oil, but any neutral frying oil will be fine.
  • Butter – for extra flavour. You can use salted or unsalted, depending on your palate (more salt is added during cooking).
  • Red onion – for colour and flavour. Replace with regular onion, or leave it out if you prefer.
  • Garlic – freshly minced garlic is best, but you can use jarred minced/chopped garlic or garlic granules/powder if you want to speed up the process.
  • Fresh coriander (cilantro) – and plenty of it. I use three-quarters of a packed cup in this recipe, but it can easily take more if you love coriander.
  • Salt, pepper and lemon juice for extra flavour.

Easy Duchess Potatoes

Simple, quick and easy Duchess potatoes. These crispy little morsels of potato are soft and buttery in the middle. I use my favourite hack to get these potatoes finished in 30 minutes. They’re also easy to make ahead and freeze.

We call these ‘fancy swirled potatoes’ at home. I mean look at them – they’re like little potato flowers, delicately sat on their tray and waiting to be smothered with a luxurious sauce!

Although they’re supposed to be served with a nice dinner, it doesn’t stop my teenage son coming into the kitchen and stuffing them straight into his mouth like giant marshmallows.

Fortunately I don’t have to spend hours in the kitchen, peeling potatoes and mashing them up for this recipe (only for them to be gobbled down by unruly teenagers). I’m using a shortcut that I discovered recently, and it’s changed my mashed potato loving life.

So these piped potatoes only take 30 minutes from start to finish!

👩‍🍳PRO TIP I’m using frozen mashed potato pieces! Yes, I know, shock horror, I write a food blog, and I haven’t even bothered to make my own mashed potatoes. But I urge you to try it. It works, it tastes the same and it saves SO MUCH TIME!

  • Juicy steak alongside a delicious steak sauce
  • Creamy Chicken Supreme or Chicken and Mushroom Casserole
