Ingredients:
2 pounds boneless, skinless chicken breasts
1 cup chicken broth
1 tablespoon minced garlic
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cream
1 cup grated Parmesan cheese
8 ounces pasta (penne or rotini are good)
1 cup frozen peas (optional)
Fresh parsley, chopped (for garnish)
Directions:
Prepare the chicken:
Add chicken breasts to pot. Add chicken broth, minced garlic, Italian seasoning, salt, and pepper.
Cook the chicken:
Cover and simmer on low heat for 6-7 hours or on high heat for 3-4 hours, until chicken is cooked through and tender.
Shred the chicken:
Once cooked, remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot. Add cream and cheese.
Add heavy cream and grated Parmesan and mix well.
Cook the pasta:
Boil the pasta in a separate pot according to package directions. Drain and add to the crockpot along with the frozen peas (if using). Mix everything together.
Cook through:
Cover the pot and cook for an additional 15-20 minutes to allow the pasta to absorb the flavors. Serve:
Garnish with fresh parsley and additional Parmesan, if desired. Serve warm!
