Chicken Gnocchi Soup

Chicken Gnocchi Soup Recipe


Ingredients:
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon Italian seasoning
4 cups chicken broth
1 cup cooked chicken, shredded
1 cup half-and-half or heavy cream
1 cup fresh spinach, chopped
1 pound gnocchi (fresh or frozen)
Salt and pepper to taste
Grated Parmesan cheese (for serving)
Instructions:
Sauté the Vegetables:
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
Add the minced garlic and Italian seasoning; cook for an additional minute.
Add Chicken and Broth:
Pour in the chicken broth and bring to a simmer. Stir in the shredded chicken and let it cook for about 5 minutes.
Cook the Gnocchi:
Add the gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes for fresh gnocchi or 5-7 minutes for frozen.
Add Cream and Spinach:
Once the gnocchi is cooked, reduce the heat and stir in the half-and-half (or heavy cream) and chopped spinach. Let it heat through for a couple of minutes.
Season:
Taste and season with salt and pepper as needed.
Serve:
Ladle the soup into bowls and sprinkle with grated Parmesan cheese. Enjoy!
