Also known as “forgotten chicken” or “no peek chicken” because everything gets dumped into a casserole dish and forgotten about while your oven does all the work for you.
Easy family dinner idea for your picky eaters!
This classic dinner recipe is a breeze to throw together with just a handful of common pantry staples. You’re simply going to spend about 5 minutes dumping everything into a large baking dish, covering it with foil, and then about an hour later you’ve got perfectly cooked creamy rice topped with flavorful baked chicken that your entire family will love.
If you’re looking for easy meals to make for your picky family, you’ve got to add this creamy chicken and rice casserole to your dinner menu!
- 1½ pounds chicken breast
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water (use one of the soup cans)
- 1 envelope Lipton Onion Soup Mix
- 1 tablespoon butter
Step 1 In a medium size bowl, combine two cups of uncooked Instant rice, both cans of creamy soup, and a can of water.
Step 2 Place the mixture into a generously buttered 9×13 baking dish. Place your chicken breasts directly on top of the mixture. I generally use 2-3 breasts that weigh in at about 1½ pounds, but that number doesn’t have to be exact.
Step 3 Evenly sprinkle the Lipton onion soup mix over the chicken. You can also add cracked black pepper and other seasonings if you’d like, but there’s no need to add extra salt.
Step 4Cover the pan with foil and bake in a 350° preheated oven for 1 – 1½ hours or until the chicken is cooked through. In my oven, 1½ pounds of chicken takes just over an hour but every oven varies. Be sure to leave the foil on the dish for at least an hour in order for the rice to steam and fully cook. I suppose that’s why it’s called no peek chicken!
Serve this yummy chicken dinner with your favorite side of veggies and watch as everyone cleans their plates! This easy recipe is perfect for feeding a large family with kids, especially if you have picky eaters at home who make dinner time feel like the hardest task of the day.
For a quick, healthy side dish, we like to air fry broccoli with a little bit of olive oil and seasoning, but any seasonal veggie would complement this flavorful chicken and rice.

Instructions
-
Preheat oven to 350° F and generously grease a 9×13 baking dish with about 1 tbsp of butter. You can also use cooking spray or oil, but I like the added flavor the butter adds to the rice.
-
In a medium size bowl, combine two cups of uncooked Instant rice, both cans of soup, and a can of water.
-
Pour the mixture into your buttered pan.
-
Place the chicken breasts on top of the mixture and sprinkle them with the envelope of onion soup mix.
-
Cover with foil and bake for 1-1½ hours or until the chicken is cooked through. Leave the foil on for at least an hour to allow the rice to fully cook before checking for doneness.
Recipe Notes
- Minute rice cooks a lot fast than regular rice, so keep that in mind when making this dish. If you decide to use regular rice, you’ll need to partially precook it first.
- 1½ pounds of chicken can be anywhere from 2-4 chicken breasts, depending on the size. It takes just over an hour to thoroughly cook in my oven but every oven varies.
- Once cooked, you can either cut the chicken into individual servings for each member of the family, or go ahead and dice the chicken and mix it in with the rice.
- Looking for side dish ideas? We love air fried broccoli tossed with bit of olive oil and seasoning, but any seasonal veggie would be a healthy addition to this simple meal.
- Wondering why this dish has so many names? It’s a classic dinner recipe that goes by either “forgotten chicken” or “no peek chicken” because once the foil is placed on the dish, you want to leave it on there and forget about it without peeking so that the rice can fully steam and cook.
